Abstract

India is one of the largest producers of fruits and vegetables, contributing approximately 14% of globalproduction; however, nearly 30–40% of this produce is lost annually due to inefficient storage and transportation practices, resulting in economic losses of about ₹92,651 crores. Accurate shelf-lifeprediction is crucial for minimizing post-harvest
